by Clare Andrews from The Ultimate Slow Cooker Cookbook

This easy winter dessert features a festive mix of mincemeat, orange zest, ginger and honey stuffed inside apples and baked until slow and fragrant.

The smell of the spices mixed with the apples is just perfect – an ideal pudding to serve on an autumn day. You can also prepare this ahead of time and simply place the apples in your slow cooker when you’re ready.

4 small Bramley apples
4 level tbsp mincemeat
1 tbsp runny honey
zest and juice of 1 large orange
½ tsp ground cinnamon
½ tsp ground ginger
To serve:
vanilla ice cream or plain yoghurt

Essential kit

You will need: a slow cooker.

COOK 4–6 hours on low or 2 hours on high.

Carefully remove the core of each apple and set the apples aside.

In a mixing bowl, mix together the mincemeat, honey, orange zest and juice and spices until well combined. Spoon into the cored apples, then place them in your slow cooker. Cook on low for 4–6 hours or high for 2 hours.

When cooked, carefully transfer the apples to a serving dish, then pour over the juices in the bottom of the slow cooker.

Serve hot with some vanilla ice cream or plain yoghurt.
