Bored of Lunch ‘Forgot to Prep’ Sunday Lunch
Use your air fryer to whip up the easiest Sunday roast ever with this simple recipe for tender roast beef from Bored of Lunch.
From the book
Introduction
It may seem weird to have a Sunday roast in the weekday dinners chapter, but thanks to the magic of the air fryer, this gorgeous roast beef can be ready in just over an hour – making midweek roasts totally possible. It’s also great if you have been out on a Saturday night and just haven’t had time to prep on Sunday morning. I recommend serving with mash, cauliflower cheese, carrots and some greens.
Ingredients
1kg | silverside beef joint |
1 tbsp | oil |
salt and pepper, to taste |
Essential kit
You will need: an air fryer.
Method
Massage the beef with the oil and season well with salt and pepper. Preheat the air fryer to 200°C.
For the first 5 minutes, air-fry at 200°C to really help the outside crisp up, then lower the temperature to 180°C or the roast setting on your air fryer for 40 minutes.
Once the 40 minutes is up, lower the temperature to 140°C for 20 minutes.
I like roast beef slightly pink on the inside, but check your joint is cooked to your liking. You can keep the roast in for longer if you prefer it more well done. Provided your air fryer is clean, use the juices at the bottom of the tray for your gravy. I also cook my roasties in the air fryer (see recipe here).
