Who are the authors? Roxy Pope and Ben Pook are the loveable duo behind SO VEGAN, one of the world’s leading vegan food platforms. They are on a mission, in their words “to make it easy for everyone to eat more plants so that people and the planet can thrive”. We can get on board with that! Roxy and Ben’s first cookbook is So Vegan. You can also catch their recipe videos on their YouTube and Instagram channels.
What’s it about? One Pot Vegan does what it says on the tin with 80 plant-based recipes that can all be made in one pot, one tray or one pan. Divided into three simple chapters – lights, dinners and desserts – this is an easy-to-navigate cookbook for anyone who wants to eat less meat and dairy without putting in lots of extra time and effort or washing up for that matter.
You’ll find imaginative, creative and inspiring recipes for pasta, curries, salads, stir-fries, noodles and even puddings with every recipe using easy-to-find supermarket ingredients. Think One-Tray Sweet & Sour Jackfruit, One-Pan Lazy Lasagne, Peanut Butter Swirl Brownies and their One-Pot ‘Chicken’ Supreme, which Roxy and Ben claim ‘is very special!”.
Recipes we love: Mushroom Tikka Masala, Pearl Barley Chilli, ‘Fishcakes’ with Homemade Slaw and Boozy Caribbean Pear Cake
Perfect for: Vegans, vegetarians, flexitarians or anyone who wants more plants on their plate without any extra fuss.
