Bored of Lunch’s Air-fried ‘Roast’ Potatoes with Fresh Rosemary

Introduction
There are so many ways to make the perfect roastie in an air fryer, one of them being to use a really low-calorie spray. You can do this if you want to reduce the calories as much as possible, but I find just adding a tiny bit of oil here really makes a difference to the taste. You can (and I do sometimes) cook these without parboiling the potatoes first, but it will mean you won’t get the insides as fluffy.
Ingredients
600g | potatoes, peeled and cut into chunks (I love a Maris Piper, but use your favourite) |
2 tbsp | oil or a few squirts of a low-calorie oil spray |
fresh rosemary, chopped | |
salt and pepper, to taste |
Essential kit
You will need: an airfryer.
Method
Parboil your potatoes for 8 minutes, then drain and give them a bit of a shake in the pot to fluff up the outsides a bit.
Add them to the air fryer but remove the grid at the bottom if you have one – you want them to sit in the small serving of oil. Spray the potatoes with low-calorie oil or add 2 tablespoons of oil.
Air-fry at 200C for 22 minutes, but shake them after 10 minutes and again at 15 minutes. Have a snoop and spray in some more low-calorie oil, if required.
For the last few minutes, add in the rosemary and a sprinkle of salt and pepper.
Calories per serving: 182.
Note: You can save 230 total calories across the whole serving if you replace 2 tablespoons of oil with low-calorie oil spray.
